For those of you who celebrate it, have a Happy and Blessed Hannukah! It was brought to my attention that today is the first night of Hannukah 2014.

I don't actually celebrate it, but it is worth mentioning because of my Jewish ancestry.

Yesterday I saw a cute parody of Shake It Off on YouTube. It was by an a capella group called Six13 and it was about Hannukah. Not offensive, just funny.

I think Hannukah ends on December 24th. How convenient and right in time for Christmas. I love it when holidays run together like that.

Personally I like to think of December as one month long celebration.

Happy Hanukkah 2015 everyone! Once again lighting my virtual menorah. That's about all I do but at least it's a little mini dedication to my Jewish Ancestors.

I can't make latkes but I can do a baked potato with sour cream. :)

I actually intend to try making latkes this week. I love to eat them, but in the past, when I have started shredding the potatoes, they have always turned black before I could start cooking with them. I think this year I will try using pre-shredded hash browns and see how I do with them.

Shred the potatoes and put them immediately into cold water to prevent oxidization.

You can acidulate the water with a tablespoon of white vinegar per quart as well, but not necessary.

Just remember to dry the shreds really well on paper towels and blot them with more paper towels 'cause water in hot oil can mean a call to your friendly neighborhood EMT.

Good advice!

Actually I made them last night with pre-shredded hash browns. They were OK, but probably not as good as the ones a Jewish grandmother makes. Mine were not especially crispy. I think latkes are supposed to be crisp, no? I mean, mine were somewhat crisp on the outside, but softer on the inside. Is that right? We ate some with sour cream and some with applesauce. They weren't bad, but to us, they just tasted like hash browns. Maybe if I'd used a deep fat fryer?

Crisp and tender is what I like so yes, you did it right.

Im a coward when it comes large pots full of boiling oil so I opt for a pan.

Not a fan of apple sauce on potatoes, too sweet.
