Got my cold weather stuff.... Peas, greenbeans, lettuce, spinach, salad mix. 'Round here, that stuff should go in by the last week in February, if the ground isn't too hard....

I'm already dreaming of crunchy May salads...... 8)

Wow I am impressed Mac, you sound like your going to have a lovely garden!! I love fresh grown salads too, especially with home grown tomato's!! :D

Here's a simple and tasty dish that I made on Sunday.

In a 3 or 5 quart pot combine 2 cups veggie stock with the following cut into bite-sized chunks:

2 tomatoes, 2 cups of celery, 1 white sweet onion.

1 medium container of dried apricots (they will re-hydrate and soften later)

1/2 tsp hot paprika

ground black pepper & sea salt to taste

1-2 tbsp minced fresh ginger root. Add other spices and herbs to your liking. I used fresh parsley and some chives.

8 oz container of Tofu (I LIVE IN CALIFORNIA!)

Bring to a boil then turn heat to simmer and cook for 2 hours

For the carnivores in the group, use chicken stock and chunks of boneless-skinless chicken breast instead of tofu and veggie stock.

I love the Winter doldrums, eating hot soup, staying in the house and cleaning all day sounds great to me, it's going to be raining here this week. I love it! I dread Summer, I don't really mind Spring cause it's not hot yet but in May it will be. One plus to it being hot here is that whaen I hang my clothes outside to dry, it takes like 5 minutes and they are done, I don't have to use my dryer!

Winter doldrums or no Winter doldrums I am going to be very busy with photo shoots this February, and I am waiting with great anticipation for the release of the remake of "The Wolf Man." Only 10 more days to go!!!

I made Rachael Ray's Mexican Lasagna last night for dinner, didnt take long and tasted pretty good, everyone in my house ate all of their dinner except one......thats almost a record!
