Yeah, there should TOTALLY be one of those! Pulling out the pumpkin guts is by far the most annoying part of carving pumpkins.

Oh, I adore roasted pumpkin seeds. I slow-roast them on, maybe, 250 degrees for an hour or two. Salt them with some kind of seasoned salt. They are to die for.

That's why I could never actually say I hate pumpkin guts. They are a mess, but the seeds are in there! And that's a unique autumnal treat. We can have them at Halloween and again at Thanksgiving, and then--we have to wait until next year!

When you eat the seeds, do you shell them like sunflower seeds? Or does the toasting make the whole thing edible?

They could just stick Mario Batali's head in there, and let him slurp up the pumpkin innards. He looks like he'd eat just about anything. So long as it's sprinkled with Parmigiano-Reggiano...

I don't think a vacuum would work that well since half the guts I pull out are scrapings from the sides of the pumpkin. It seems to take forever to scrape out.

I eat the seeds without the shells. I like to turn them vertically, then bite down on the sharp end to split them. I work my way back until it opens. The shells kill the flavor.

It's also possible to salt them with various seasonings while they're roasting. And they should be thoroughly washed to remove the pumpkin.
